Vegetable Lo Mein

8 oz gluten free angel hair pasta

1 ¼ cup gluten free chicken or vegetable stock

1/3 cup gluten free soy sauce

1 Tbs cornstarch

2 Tbs canola oil

1 ¾ cups celery, chopped

1 ¾ cups fresh mushrooms, sliced

1 ¾ cups red bell peppers, sliced

1 cup carrots, sliced

2 cloves garlic, minced

½ cup onion, sliced

2 cups bean sprouts

2 cups snow peas


Bring a pot of lightly salted water to a boil. Add gluten free angel hair pasta and cook for 3 to 5 minutes or until al dente; drain. In a small bowl, whisk together the stock, soy sauce, and cornstarch. Heat the oil in a wok over medium-high heat. Stir in the celery, garlic, carrots, mushrooms, peppers, and onion, and cook about 3 minutes. Add the stock mixture, bean sprouts, and snow peas. Continue to cook and stir about 5 minutes, until vegetables are crisp tender. Toss together the cooked pasta and the vegetables and sauce and serve. (Serves: 4)
