Corn Dogs

Ingredients


1 cup yellow cornmeal


1 cup gluten free all-purpose flour


¼ tsp salt


¼ cup granulated sugar


4 tsp baking powder


1 egg


1 cup milk


1 quart vegetable oil for frying


2 (16 oz) packages gluten free hot dogs


16 wooden skewers


Directions


In a medium bowl, combine cornmeal, flour, salt, pepper, sugar and baking powder. Stir in eggs and milk. Pour batter into a tall glass for easy dipping and refrigerate about 30 minutes. Preheat oil in a deep saucepan over medium heat. Dry the hot dogs with a paper towel before dipping them in the batter to help batter stick. Insert wooden skewers into hot dogs. Roll hot dogs in batter until well coated. Fry 2 or 3 corn dogs at a time until lightly browned, about 3 minutes. Drain on paper towels. (Serves: 16)
