Pecan Crusted Chicken Nuggets

1 ½ cups EREWHON® - Corn Flakes Cereal

1 Tbs dried parsley flakes

½ tsp garlic powder

½ cup Kinnikinnick Gluten Free Panko-Style Bread Crumbs bread crumbs

½ cup finely chopped pecans

3 Tbs 2% milk or substitute

1 ½ lbs boneless skinless chicken breasts, cut into 1-inch pieces

Coarse salt & fresh ground black pepper, as desired

Cooking spray


Preheat oven to 400°. Place gluten free cornflakes, parsley and garlic powder into a blender; cover and pulse until finely ground. Transfer to a shallow bowl; stir in gluten free bread crumbs, salt and pepper and pecans. Place milk or substitute into another shallow bowl. Dip chicken in milk and then roll in crumb mixture to coat. Place on a baking sheet prepared with cooking spray. Lightly spray chicken with cooking spray to increase crispiness. Bake 12-16 minutes or until chicken is no longer pink, turning once halfway through cooking. (Serves: 6)
