Crispy Tilapia

Ingredients


4 Tbs Hellman's Dijonnaise (or 2 Tbs each of Mayo and Dijon mustard)


3/4 cup gluten free Panko style breadcrumbs


½ cup gluten free all-purpose flour


Coarse salt & fresh ground black pepper


1 tsp garlic powder


¼ tsp cayenne pepper, optional


2 tsp dried parsley


4 (6 -8 oz) tilapia fillets


4 lemon wedges


3 Tbs olive oil


Directions


Heat oil in large non-stick skillet over med. heat. Combine mayo and mustard in small dish (if not using Dijonnaise). Lightly coat tilapia in gluten free flour; shake off access. Brush thin coating of Dijonnaise on to both sides of each fish fillet. Combine Panko, salt & pepper, garlic powder, parsley and cayenne on a plate and mix well. Press each coated fillet into Panko crumb mixture, (both sides) coating well. Press more crumbs into any bare areas. Sauté fillets in hot oil until lightly browned, about 4-5 minutes per side or until lightly browned and fish is opaque. Serve with lemon wedges. You can also bake the fish at 400° F for 15-17 minutes for a healthier version. (Serves: 4)
