Grilled Chicken Quesadillas

7-8 boneless chicken breasts-pounded to an even thickness

1 package of large gluten free flour tortillas

1 (16 oz) package grated Mexican 4 cheese mix

1 lime juiced

3 Tbs olive oil

¼ cup SPIKES' salsa mild or med

¼ tsp cumin

½ tsp chili powder

2 cloves garlic minced

½ tsp salt

½ tsp pepper

¼ cup fresh chopped cilantro

Optional Toppings:

Green onion, chopped

Sour cream



To make marinade combine lime juice, olive oil, salsa and seasonings in a bowl. Place chicken in a pan with sides. Pour marinade over chicken and toss to coat evenly. Let chicken marinate 30 minutes. Grill chicken until done. Cool slightly and cut into strips. Heat a cast iron skillet on med. Place one tortilla on skillet. Sprinkle a thin layer of cheese on one half, then chicken, then cheese. Fold the empty side of tortilla over the full side and toast. Flip with a spatula and toast other side until cheese is melted. Slice into wedges.
