Sesame Pasta Chicken Salad

Ingredients


¼ cup sesame seeds


1 package gluten free rotini pasta


1/3 cup olive or vegetable oil


1/3 cup gluten free soy sauce


1/3 cup rice vinegar


1 tsp sesame oil


3 Tbs granulated sugar


½ tsp ground ginger


¼ tsp fresh ground black pepper


3 cups rotisserie chicken, shredded or bite size pieces


1/3 cup fresh cilantro, chopped (optional)


1/3 cup chopped green onion


½ cup carrots, julienned


½ cup bell pepper, sliced then


½ cup cherry tomatoes, sliced in half


Directions


Heat a skillet over medium-high heat. Add sesame seeds, and cook stirring frequently until lightly toasted. Remove from heat, and set aside. Bring a large pot of lightly salted water to a boil. Add pasta, and cook according to package directions, or until al dente. Drain pasta, and rinse under cold water until cool. Transfer to a large bowl. Add carrots, peppers and tomatoes to bowl. In a jar with a tight-fitting lid, combine vegetable oil, soy sauce, vinegar, sesame oil, sugar, sesame seeds, ginger, and pepper. Shake well. Pour ½ of the sesame dressing over pasta, and toss to coat. Gently mix in chicken, cilantro, and green onions. Refrigerate salad until ready to serve. Just prior to serving, shake remaining dressing well and pour over salad. Toss gently to coat and serve. (Serves: 8-10)
