Chicken Taco Soup

Ingredients


1 pound boneless skinless chicken, cooked and shredded


1 can black or pinto beans, rinsed & drained


2 cups SPIKES’ Mild Salsa


6 cups gluten free chicken stock


1 packet gluten free taco seasoning


2 cups tortilla chips, crushed


Sour cream, optional


Shredded cheese, optional


Directions


Combine chicken, beans, salsa, stock and seasoning in a 2-quart soup pot. Bring to a boil. Reduce heat and simmer 20-30 minutes or until flavor blends. Serve soup topped with crushed tortilla chips, cheese and sour cream if desired. (Serves: 6)
