Shrimp with Tomato and Feta

Ingredients


1 cup MinuteĀ® White Rice, uncooked


1 cup onion, chopped


2 Tbs oil


1 (28 oz.) can Italian-style plum tomatoes, drained, cut up


1/3 cup dry white wine


2 tsp dried oregano leaves


1 lb medium shrimp, deveined and cleaned


1 (4 oz.) pkg crumbled feta cheese


2 Tbs fresh parsley, chopped


Directions


Prepare rice according to package directions. Cook and stir onion in hot oil in large skillet on medium heat 3 minutes. Add tomatoes, wine and oregano; mix well. Reduce heat to low; cook 5 minutes or until thickened, stirring occasionally. Add shrimp. Cook 3 minutes or until shrimp are pink, stirring frequently. Sprinkle with cheese; cook 1 minute. Stir in parsley. Serve over rice. (Serves: 4)

*Jazz It Up: Garnish with fresh oregano just before serving.
