Ingredients
1 ½ cup hot chicken or vegetable stock
Uncooked Minute® Rice-White Rice
¼ tsp. Italian seasoning
¼ tsp. garlic powder
1 (10 oz.) pkg. chopped broccoli, thawed & drained
1 Tbs grated Parmesan cheese
30 Blue Diamond Hint of Sea Salt Nut Thins, crushed
1 lb. fish fillets, thawed
Paprika
½ cup shredded Cheddar cheese
Directions
Preheat oven to 375° F. In an 8 x 12 inch baking dish, combine stock, uncooked rice and seasonings. Bake, covered, in preheated oven for 10 minutes. Top with broccoli, ½ of the crushed Nut Thins and Parmesan cheese. Place fish fillets diagonally down the center of the dish. Sprinkle fish lightly with paprika. Bake covered in the preheated oven for 20-25 minutes or until fish flakes easily with a fork. Stir rice. Top fish with Cheddar cheese and remaining Nut Thins. Bake uncovered for 3 minutes or until cheese is melted. Serve fish over rice.
*Note: Additional Parmesan cheese can be substituted for Cheddar if desired.
