Pasta with Broccoli & Peppers

Ingredients


10 oz gluten free linguini pasta


1 lb fresh broccoli florets, chopped


3-4 Tbs extra virgin olive oil


4 cloves garlic, minced


2 red bell pepper, thinly sliced


½ cup red onion, thinly sliced


2 roma tomatoes, chopped


½ cup vegetable or chicken stock


¼ cup grated Parmesan cheese


Directions


Cook gluten free pasta according to package directions until al dente and adding broccoli to the pot the last 3-4 minutes; drain. In 10-inch skillet, heat olive oil over low heat. Stir in garlic, red pepper and onion; sauté gently until crisp tender. Add tomatoes and stock to skillet; simmer to warm. Toss vegetable mixture with hot pasta. Sprinkle with Parmesan cheese. (Serves: 4-6)
