Parsley and chickpea salad with Veggie Bites

Directions


1 can garbanzo beans, drained


1 bunch Parsley, fresh, chopped


½ cup cherry tomatoes, quartered


1 bunch green onion, chopped


2 cloves Garlic, pressed


1 Tbs ume plum vinegar


Juice of one medium lime


½ Tbs dried dill


½ Tbs siracha or other hot sauce


2 Tbs honey or preferred sweetener


¼ cup olive oil


5 Hilary’s Eat Well Original Veggie Bites


Ingredients


Cook Hilary's Eat Well Veggie Bites according to directions. Chop parsley, tomato, and green onion and mix in a bowl with the rinsed garbanzo beans. Wisk remaining ingredients in bowl and until combined and toss with vegetable and bean mixture. Salt and spices in dressing can be adjusted to taste. Let rest for 10 minutes before topping with veggie bites and serving. (Serves: 4)
