Ingredients
1 Tbs. oil
1 lb lean ground beef
1 cup water
1 cup salsa
1 (1.25 oz.) package gluten free dry taco seasoning mix
2 cups Minute® White Rice, uncooked
8 gluten free flour tortillas
1 cup cheddar cheese, shredded
Ingredients
Heat oil in large skillet on medium-high heat. Add ground beef; cook and stir until lightly browned. Stir in water, salsa and seasoning mix. Bring to boil. Stir in rice; cover. Remove from heat. Let stand 5 minutes. Stir. Spoon ground beef mixture evenly onto gluten free tortillas; sprinkle with cheese. Fold half of tortillas to enclose filling. (Serves: 4)
*For a whole grain alternative, substitute MINUTE® Brown Rice for the MINUTE® White Rice.
*Chicken Soft Tacos: Prepare as directed, substituting 1 pound boneless skinless chicken breasts, cut into strips, for the ground beef.
