Pasta with Broccoli & Tomatoes

Ingredients


1 Tbs olive oil


1 Tbs fresh garlic, minced


2 (14.5 oz) cans seasoned diced tomatoes


1 Tbs balsamic vinegar


1 tsp dried basil


¼ tsp crushed red pepper flakes


12 oz Ronzoni Gluten Free™ Penne Rigate


1 lb broccoli florets


1/3 cup crumbled reduced fat feta cheese


Directions


Heat the oil in a skillet over medium low heat. Add the garlic, and cook gently for 1 minute. Add the tomatoes (with juice), vinegar, basil, and red pepper flakes. Increase the heat, and bring the sauce to a simmer. Cook the sauce for 15 minutes, stirring frequently. While the sauce is simmering, cook pasta according to package directions. Add the broccoli to the pasta pot and cook for the last 2 minutes of cook time. Drain the pasta and broccoli, and transfer them to a large bowl. Add the sauce, and toss well. Sprinkle with the feta cheese and serve. (Serves: 4)
