Ingredients
1 medium onion, chopped
2 cloves garlic, minced
1 Tbs. vegetable oil
2 (6 ½ oz.) cans chopped clams, undrained
1 (14 ½ oz.) can diced tomatoes
1 (6 oz.) can tomato paste
¼ cup fresh parsley, minced
1 bay leaf
1 tsp. sugar
1 tsp. dried basil
½ tsp. dried thyme
6 oz. gluten free pasta
Directions
In a small skillet, sauté onion and garlic in oil until tender. Transfer to 2 qt. slow cooker. Stir in the clams, tomatoes, tomato paste, parsley, bay leaf, sugar, basil and thyme. Cover and cook on LOW for 3-4 hours or until heated through. Cook pasta according to package directions until al dente. Discard bay leaf and serve over gluten free pasta. (Serves: 4)
