Ingredients
4 (4 oz.) tilapia fillets
¼ cup olive oil
¼ cup raspberry vinegar
¼ cup honey
1 tsp. yellow mustard
½ tsp. dried dill weed
Fresh raspberries, for garnish
Directions
Preheat oven to 350° F. Prepare an 11-x-7-inch baking dish lightly with non-stick cooking spray. In a mixing bowl, whisk together olive oil, raspberry vinegar, honey, mustard and dill weed. Arrange the tilapia fillets in a single layer in the prepared baking dish. Pour mixture over fish fillets, coating the fillets evenly. Bake in a preheated oven, uncovered for 20 minutes or until fish flakes easily with a fork. Garnish with fresh raspberries and serve. (Serves: 4)
