Ingredients
1 package Black Rice Burgers
Fresh Baby Greens Spring Mix
½ Red Onion (thinly sliced)
½ fennel bulb
1 package Love Beets
1 avocado (Sliced and divided in half) Coarse Salt/Herb Blend
Hilary’s Eat-Well Ranch Chia Dressing
Directions
Heat the Black Rice Burgers in a skillet or in the oven until they are piping hot. While the Burgers are cooking prepare the fennel, red onion, beets and avocado. For the fennel, trim off the root end and the top with stalks. Cut the fennel in half, lengthwise. Remove the center core. Cut each half lengthwise into thin slices - about ¼ inch. Slice (or dice) cooked beets. Mix it all up on a bed of dark, leafy greens and top with Ranch Chia dressing.
