Veggie Chili

Ingredients


2 Hilary's Eat Well Adzuki Bean Burgers


1 large onion, diced


1 large sweet potato, diced


1 cup adzuki beans, cooked and drained


1 cup black beans, cooked and drained


1 Tbs coconut oil


2 Tbs chili powder


½ tsp cinnamon


½ tsp freshly ground pepper


1 Tbs cumin


½ tsp garlic powder


1 Tbs maple syrup or honey


1 tsp Redmond's Real Salt


½ tsp apple cider vinegar


1 can diced tomato


1 can tomato sauce


2 clove Garlic, minced


2 cups water


Directions


Heat coconut oil in a large pot. Sauté onion and sweet potatoes until onions are translucent. Turn the heat down and add all of the spices and chopped garlic. Cook for 1-2 minutes and then add the tomatoes, tomato sauce, apple cider vinegar, maple syrup and water. Cook chili for 20-30 minutes until sweet potatoes are tender. Chop Adzuki Bean Burgers into bite sized cubes and mix into the chili. Cook for 10 min longer until the veggie burger pieces are heated through. Serve and enjoy!
