Ingredients
2 cups shredded skinless rotisserie chicken meat
1/3 cup gluten free barbecue sauce
1 ½ cups fresh corn kernels
2 plum tomatoes, chopped
1 Tbs fresh lime juice
8 gluten Rudi's Gluten-Free Plain Tortillas
Shredded lettuce
Sour cream, optional
Directions
In large bowl, stir together chicken, barbecue sauce, corn, tomatoes, and lime juice. Just before serving tacos, warm tortillas according to package directions. To serve, divide lettuce and chicken mixture among tortillas; fold over. Serve each with a dollop of sour cream, if desired. (Serves: 4)
