Mini Ciabatta Pizzas

Ingredients


1 bag of Rudi’s Gluten-Free Bakery Ciabatta Rolls


½ cup pizza sauce


1/3 cup shredded mozzarella


½ cup steamed, chopped broccoli florets


½ cup steamed asparagus


¼ cup steamed red pepper


Directions


Preheat oven to 400°F. Place frozen Ciabatta on a foil-lined baking sheet and bake for 8 minutes. Remove rolls from oven. When rolls are cool enough to handle, remove the tops of the Ciabatta rolls with a bread knife; discard tops or use for another purpose. Place rolls back onto the baking sheet. Spread 1 Tbs of sauce over the tops of the rolls, sprinkle with 2 tsp each mozzarella, and top with 1 Tbs of the chopped broccoli. Place rolls back in oven for an additional 2 minutes, or until the cheese has melted. Serve hot. (8 Servings)
