Gingered Shrimp and Rice

1 cup Gourmet House® White Rice or Organic White Rice

1 Tbs vegetable oil

2 Tbs fresh ginger, grated

1 Tbs fresh garlic, minced

1 lb shrimp, peeled and deveined

1 cup snow peas

½ cup red bell pepper, julienned

1 tsp sea salt

1 tsp ground black pepper

¼ cup green onions, thinly sliced


Prepare rice according to package directions. Heat oil in a large skillet over medium-high heat. Add ginger and garlic and stir-fry 30 seconds. Add shrimp and stir-fry until just pink, about 3 minutes. Add snow peas, bell pepper, salt and pepper. Stir-fry until vegetables are crisp-tender and shrimp are cooked through, about 3 more minutes. Serve over cooked rice. Garnish with green onions. (Serves: 4)
