Happy Baby Apple Oat Muffins

1 cup gluten free quick-cook oats

1 ½ cup gluten free all-purpose flour

¾ tsp. cinnamon

1 tsp. baking powder

¾ tsp. baking soda

¼ tsp. salt

½ cup sugar

1 cup Happy Baby Starting Solids Pouches- Pears, Winter Squash or Happy Baby Simple Combos- Apple & Cherry

1 egg, lightly beaten

½ cup low-fat milk

4 Tbs. oil

1 tsp. vanilla extract

1 cup raisins (optional)

Preheat oven to 350° F. Lightly grease a standard 12-muffin pan or line with paper cups. In a bowl, combine gluten free oats, flour, cinnamon, baking powder, baking soda, salt and sugar. Mix well and set aside. In a large bowl, mix together the Pears, Winter Squash or Apple & Cherry, egg, milk, vanilla extract, and oil. Add the flour mixture and mix just until the ingredients are moistened. If using raisins, gently fold in until combined. Fill each muffin cup about 2/3 full with batter. Bake 20 minutes or until done. Makes 12 muffins or 24 mini muffins.
