Chopped Mediterranean Salad

Ingredients


1 bunch romaine lettuce, coarsely chopped


1 pint grape tomatoes, quartered


1 (15 oz) can garbanzo beans, drained, rinsed


1/4 cup Kalamata olives, pitted and coarsely chopped


2/3 cup crumbled feta cheese


½ cup red onion, chopped


1 cup seedless cucumber, diced


3 Tbs red wine vinegar


3 tablespoons extra virgin olive oil


1 medium garlic clove, minced or pressed


Directions


Combine cucumber, tomatoes, and 1 tsp salt in colander set over bowl and let stand 15 minutes. Whisk oil, vinegar, and garlic together in large bowl. Add drained cucumber and tomatoes, chickpeas, olives and onion; toss and let stand at room temperature to blend flavors, 5 minutes. Add romaine and feta; toss to combine. Season with salt and pepper and serve. (Serves: 4-6)
