Mexican Beef Stir Fry

1 cup Gourmet House® White Rice or Organic White Rice

1 lb beef flank steak

2 Tbs vegetable oil

1 tsp ground cumin

1 tsp dried oregano leaves

1 clove fresh garlic, pressed

1 red bell pepper, cut into strips

1 medium red onion, cut into wedges

2 jalapeño pepper, sliced

2 cups thinly sliced lettuce


Prepare rice according to package directions. Cut beef steak into 1/8-inch strips. In a small bowl, combine oil, cumin, oregano, and garlic, reserve half of spice mixture. Heat half of the seasoned oil over medium high heat. Add bell pepper, onion, and jalapeno pepper; stir fry for 2 to 3 minutes. Remove and reserve. In same skillet, stir fry beef strips in remaining oil. Return vegetables to skillet and heat though. Combine sliced lettuce with hot rice. Serve beef stir fry over lettuce-rice mixture. (Serves: 6)
