Sweet Potato Burrito

1 Tbs vegetable oil

1 onion, chopped

4 cloves garlic, minced

6 cups canned black beans, drained

¼ cup water

3 Tbs chili powder

4 tsp prepared mustard

2 tsp ground cumin

1 pinch cayenne pepper, or to taste

3 Tbs gluten free soy sauce

4 cups peeled, mashed cooked sweet potatoes (about 3 large)

12 Rudi's Gluten-Free Plain Tortillas, warmed

12 ounces shredded Mexican blend cheese


Preheat oven to 350° F. Heat oil in a medium skillet and sauté onion and garlic until soft. Mash ½ of the beans into the onion mixture. Gradually stir in water; heat until warm, 2 to 3 minutes. Remove from heat and stir in the soy sauce, chili powder, mustard, cumin, and cayenne pepper. Sweet potatoes can be cooked in microwave 13 minutes or boiled in water and then mashed. Divide bean mixture and mashed sweet potatoes evenly between the tortillas; top with cheese. Fold tortillas burrito-style around the fillings and place on a baking sheet. Bake in the preheated oven until warmed through, about 12 minutes. Serve topped with sour cream if desired. (Serves: 12)
