Grilled Chicken & Asparagus Salad

Ingredients


1 ½ lbs skinless, boneless chicken breasts


6 Tbs olive oil, divided


2 tsp kosher salt, divided


½ tsp fresh ground black pepper, divided


2 lbs asparagus, trimmed


4 oz crumbled goat cheese


¼ cup shallots, thinly sliced


1/3 cup mayonnaise


3 Tbs buttermilk


2 tsp fresh lemon juice


2 cloves garlic, minced


2 Tbs fresh mint, chopped


2 tsp chopped fresh dill


Directions


Preheat grill to medium-high heat. Brush chicken with 2 Tbsp. oil; sprinkle with salt & pepper. Grill chicken until tender and juices run clear, about 7 minutes per side; chop. Place asparagus on grill rack coated with cooking spray; grill 5 minutes on each side or until asparagus is done. Cut asparagus into 2-inch pieces. Toss together chicken, asparagus, cheese, shallot, ½ tsp. salt, and ¼ tsp. pepper in a bowl. Whisk together mayonnaise, buttermilk, lemon juice, garlic, 2 Tbsp. oil, and ¼ tsp. salt; drizzle over chicken mixture. Top with herbs and serve.
