Soba with Toasted Sesame Seed Sauce

2 Tbs sesame seeds

8 oz King Soba Organic 100% Buckwheat Noodles

4 Tbs rice vinegar

1 ½ Tbs white sugar

4 Tbs gluten free soy sauce

1 clove garlic, minced

2 tsp sesame oil

5 green onions, chopped

3 cups broccoli florets

1 cup carrots, julienned


Stir fry sesame seeds in a dry heated wok for about 1-2 minutes stirring constantly until they are a rich brown around the edges. Cook the noodles according to package directions. Drain noodles, rinse them well with cold water, and drain them again. Blanch carrots & broccoli in boiling water 3-5 minutes; rinse under cold water & drain. Whisk together the vinegar, sugar, soy sauce & sesame oil. Stir in the garlic, and green onions. Place the noodles in a large bowl add the toasted sesame seeds, broccoli and carrots. Drizzle the vinegar mixture over the noodles; toss well. Serve immediately or at room temperature.
