Ingredients
2 cups cubed fresh pineapple
2 green onions, chopped
¼ cup green pepper, finely chopped
¼ cup fresh cilantro, minced
4 tsp plus 2 Tbs lime juice, divided
Coarse salt & fresh ground black pepper, as desired
Dash cayenne pepper, optional 1 Tbs canola oil
4 (4 oz) tilapia fillets
Directions
For salsa, in a small bowl, combine pineapple, green onions, green pepper, cilantro, 4 tsp lime juice, salt and cayenne. Refrigerate until serving. Mix oil and remaining lime juice; drizzle over fillets. Sprinkle with salt & pepper. Lightly coat grill rack with cooking oil. Grill fish, covered, over medium heat or broil 4 in. from heat 2-3 minutes per side or until fish flakes easily with a fork. Serve fish topped with salsa. (Yield: 4 servings with 2 cups salsa)
