Multi-Grain Crunch Salad

Ingredients


1 bag MinuteĀ® Multi-Grain Medley, uncooked


1 cup vegetable broth


1 cup cooked chicken breast, diced


1/3 cup fresh celery, sliced


1/3 cup carrot, sliced


1/3 cup red bell pepper, sliced


1/3 cup citrus vinaigrette


Lettuce leaves


Directions


Prepare Multi-Grain Medley according to package directions, substituting broth for water. Cool. In a medium bowl, combine chicken, celery, carrot, bell pepper and vinaigrette. Fold in Multi-Grain Medley. Serve on lettuce leaves. (Serves: 2)
