Rosemary-Crusted Pork Tenderloin

Ingredients


¼ cup gluten free bread crumbs


2 cloves garlic, chopped


1 tsp smoked paprika


1 Tbs fresh rosemary, chopped


Kosher salt and black pepper


1 (1 ¼ lb) pork tenderloin


1 tsp olive oil




Directions


Heat oven to 425° F. On a large plate, combine the gluten free bread crumbs, garlic, paprika, rosemary, and ½ tsp salt. Rub the pork with 1 tsp of oil, coat with the bread crumb mixture, then place on a rimmed baking sheet. Roast the pork until cooked through, 20 to 30 minutes. Let rest 5 minutes before slicing. (Serves: 4)
