Ingredients
2 Tbs. canola oil
4 boneless skinless chicken breast halves
2 Tbs. butter
¼ cup red onion, finely chopped
1 cup gluten free barbeque sauce
2 Tbs. brown sugar
2 Tbs. balsamic vinegar
2 Tbs. honey
1 cup fresh strawberries, sliced
Directions
Preheat oven to 350°F. In a large ovenproof skillet, heat oil over medium-high heat. Brown chicken on both sides. Remove from pan. In same pan, heat butter over medium high heat. Add onion; cook and stir 1 minute or until tender. Stir in barbeque sauce, brown sugar, vinegar, and honey. Bring to a boil. Reduce heat; simmer, uncovered, 4-6 minutes or until thickened. Return chicken to pan. Bake 12-15 minutes or until a thermometer reads 165°F. Stir in strawberries then serve. (Makes 4 servings.)
