Breaded Fish Sandwiches

½ cup gluten free dry bread crumbs

½ tsp garlic powder

½ tsp cayenne pepper

½ tsp dried parsley flakes

4 (6 oz) cod fillets

4 gluten free hamburger buns, split

¼ cup plain Greek yogurt

¼ cup fat-free mayonnaise

2 tsp lemon juice

2 tsp sweet pickle relish

¼ tsp dried minced onion

Lettuce leaves, optional

Tomato slices, optional

Sweet onion slices, optional


Lightly coat the grill rack with cooking oil and preheat to medium heat. In a shallow bowl, combine the gluten free bread crumbs, garlic powder, cayenne and parsley. Dredge cod fillets in the bread crumb mixture. Grill cod, covered, over medium heat or broil 4 in. from the heat for 4-5 minutes on each side or until fish flakes easily with a fork. Grill buns over medium heat for 30-60 seconds or until toasted. Meanwhile, in a small bowl, combine the yogurt, mayonnaise, lemon juice, relish and minced onion; spread over toasted bun bottoms. Top with cod, lettuce, tomato, onion and bun top. (Serves: 4)
