Ingredients
9 large eggs
½ lb. bacon, cooked
1 tomato, chopped
2 green onions, diced
1 cup cremini mushrooms, diced
1 cup arugula, chopped
1 Tbs. fresh thyme
Preheat oven to 375° F. In a large bowl, lightly beat eggs. Stir in cooked bacon, tomato, green onions, mushrooms, arugula, thyme, and salt and pepper to taste. Prepare muffin tins with nonstick cooking spray. Divide mixture among 12 medium-sized muffin tins and cook until set, about 20 minutes. Let cool several minutes before removing from muffin tins to serve. (Serves: 6)
