Black Bean Mexi-Pizza

Ingredients


1 (14 inch) Namaste Foods Pizza Crust (pre-baked for approximately 20 minutes. Flipping over halfway through)


1 can Black beans


¼ cup Salsa


1 clove Garlic


½ tsp. Cumin


½ tsp. Chili powder


1 Chicken breast, chopped or pulled from a roasted chicken


1 small Roma tomato, diced


2 Green onions, white and green parts sliced


1 cup Mexican cheese blend


¼ cup Sliced olives


Directions


Preheat oven to 450° F. Place black beans, garlic, cumin, chili powder and salsa in a blender. Purée until smooth. Place 1 to 1 ½ cups bean purée on top of pizza crust, top with cheese, chicken, tomatoes, green onions and olives. Bake for 10 minutes. Slice and serve with chopped cilantro and a dollop of sour cream if desired.

*Variations - This pizza would be great made with leftover taco meat in place of chicken, too. A great way to get kids to eat more greens.... top it with shredded lettuce!
