Chicken and Lentils with Cashews

2 bags MinuteĀ® Basmati Rice

2 Tbs. vegetable oil, divided

1 onion, thinly sliced

2 each garlic, minced

2 Tbs. curry powder

1 tsp. ground cumin powder

1 lb. chicken breast, cubed in 1/2-inch pieces

1 can (15 oz.) lentils, rinsed and drained

1/2 cup plain yogurt

1/4 cup cashew nuts, chopped (optional)


Prepare rice according to package directions. Heat 1 tablespoon of oil in a large pan over medium heat. Add onions and cook 8 minutes, stirring occasionally, until softened. Stir in garlic, curry and cumin. Cook for 1 to 2 minutes more. Add the remaining oil and the chicken and cook for 10 minutes, stirring to coat chicken in spice mixture. Fold in lentils and cover and simmer until chicken is thoroughly cooked, about 5 minutes. Stir in yogurt. Serve over rice and garnish with cashews, if desired. (Yield: 4 servings)

*For a vegetarian alternative to this recipe, omit chicken and add chopped vegetables such as cauliflower, sweet potato or butternut squash and cook until tender.
