Allergy Free Chicken Nuggets

Ingredients


1 ½ c. Certified gluten free quick-cooking oats


1/8 tsp. or less red pepper


1 tsp. salt


1 Tbs. chili powder


¾ tsp. garlic powder


¼ to ½ tsp. ground cumin


¼ tsp. pepper


Chicken tenders


2 Tbs. all-vegetable shortening


Directions


Preheat oven to 375 degrees. Coat a 13 x 9 inch baking dish with the vegetable shortening; set aside. In a large bowl, combine oats, red pepper, chili powder, salt if desired, garlic powder, cumin and pepper. Dip chicken in water, then coat with oat mixture. Press chicken into mixture firmly on both sides. Place in prepared baking dish.
Bake for 45-50 minutes or until juices run clear. Turn chicken over once half way through baking.
