Fried Rice

Ingredients


2 Tbs. vegetable oil, divided


1 egg beaten


1 onion, chopped


2 cloves garlic, crushed


2 c. raw or cooked, diced or shredded vegetables like- celery, peppers, mushrooms, carrots, bean sprouts, broccoli, snow peas, cabbage or green beans.


2 c. diced, cooked meat, fish or protein substitute


3 c. cold leftover cooked S&W Rice - Organic White Rice


2 Tbs. gluten free soy sauce


1 tsp. sesame oil


4 green onions, sliced


Directions


In a wok or large skillet, heat 1 Tbs. vegetable oil over high heat. Add egg and cook, stirring, until egg is scrambled. Remove scrambled egg from pan. Pour the remaining vegetable oil into the wok. When oil is very hot, add chopped onion and garlic and cook, stirring, for 2 to 3 minutes or until onion is softened. Add any raw vegetables next, cooking for about 2 minutes, followed by cooked vegetables. Next add the cooked meat, stirring to mix well and heat through. Finally, add the rice, stirring constantly to break up any clumps of rice, mix it with the other cooked ingredients and heat thoroughly. Add gluten free soy sauce and sesame oil and cook, stirring, for 2 to 3 minutes. Stir in the scrambled eggs and stir-fry for 1 minute more. Remove from the heat and serve immediately.
