Ingredients
1 ¾ c. honey
¾ c. fresh lemon juice
½ c. gluten free Dijon mustard
1/3 c. fresh ginger
4 lbs. boneless skinless chicken breasts, cut into 1-inch pieces
6 fresh plums, pitted and quartered
3 firm bananas, cut into chunks
4 c. fresh pineapple chunks
Directions
Prepare grill for direct cooking. Combine honey, lemon juice, mustard and ginger in a small bowl; mix well. Thread chicken and fruit onto skewers, alternating chicken with fruit; brush generously with honey mixture. Place kebobs on grill about 4 inches from heat. Grill 5 minutes on each side, brushing frequently with honey mixture. Grill 10 minutes more or until chicken is cooked through, turning and brushing frequently with remaining honey mixture.
