Veggie-Tuna Salad Wrap

2 scallions (white and green parts), cut into 1-inch pieces

1 rib celery, cut into 1-inch pieces

2/3 c. broccoli florets

1/2 c. packed flat-leaf parsley leaves

1/4 Granny Smith apple with skin, cored and coarsely chopped

1 can water-packed albacore tuna

2 Tbs. reduced-fat mayonnaise

2 gluten free tortilla wraps

1 large plum tomato, thinly sliced


Place scallions, celery, and broccoli in a food processor. Pulse until coarsely chopped. Add parsley and apple and pulse until finely chopped. Transfer mixture to a bowl. Combine tuna and mayonnaise in food processor. Process until mixture is easy to spread, about 45 seconds, scraping down bowl as needed. Season to taste with salt and freshly ground black pepper. Divide tuna evenly between wraps, spreading with spatula to cover all but 3/4-inch along edge of each wrap. Add half of the apple-vegetable mixture, pressing lightly to spread over tuna. Top each wrap with tomato slices. Fold in wrap sides, then roll into tight cylinders.
