Grilled Tuna with Rosemary

Ingredients


1 lb. fresh tuna steaks


2 tsp. extra virgin olive oil


2 tsp. fresh lemon juice


Coarse salt & fresh ground pepper to taste


2 cloves garlic, minced


2 tsp. fresh rosemary or 1 tsp. dried rosemary, crushed


1 Tbs. drained capers, slightly crushed


Directions


Rinse fish and pat dry with a paper towel. Cut into 4 serving-size portions. Brush both sides of each piece with olive oil and lemon juice; sprinkle with salt & pepper. Rub garlic and rosemary onto fish. Prepare grill for direct cooking over medium-high heat. Place fish steaks on the oiled grill grates or in a grill basket and grill uncovered. Tuna is done when opaque throughout. Steaks that are one inch thick should take about 8 minutes to cook. To serve, top steak with capers and garnish with fresh rosemary if desired.
