Slow Cooker White Chicken Chili

6 skinless chicken thighs

1 large onion, chopped

2 cloves garlic, finely chopped

1 3/4 c. IMAGINE Free Range Chicken Broth

1 tsp. ground cumin

1 tsp. dried oregano leaves

Coarse salt & fresh ground pepper to taste

1/4 – 1/2 tsp. Emeril’s Red Pepper Sauce

2 cans great northern beans, rinsed & drained

1 can white shoepeg corn, drained

3 Tbs. lime juice

2 Tbs. fresh cilantro, chopped


In a 3 1/2 – 4 quart slow cooker, mix onion, garlic, broth, cumin, oregano, red pepper sauce and salt & pepper. Stir to combine and add the chicken. Cover; cook on Low for 4-5 hours. Remove chicken from slow cooker. Shred chicken into pieces, discard the bones and return the chicken to the slow cooker. Stir in the beans, corn, lime juice and cilantro. Cover and cook on Low for 15 – 20 minutes more, or until beans and corn are hot.
