Peanut-Orange-Crusted Salmon

6 (5-6 oz.) salmon Fillets

Juice of 1 lemon

Coarse salt & fresh ground pepper to taste

3/4 c. toasted peanuts, chopped fine

3/4 c. Kinnikinnick Gluten Free Panko Style Bread Crumbs

Zest from 1 orange

2 Tbs. chopped fresh flat leaf parsley

2 cloves garlic, minced

1-2 Tbs. olive oil

1/2 c. dry white wine

Annie’s Organic Green Goddess dressing, optional


Preheat oven to 450º. Sprinkle fish with lemon juice and season with salt and pepper; set aside. In a small bowl, mix together peanuts, bread crumbs, orange zest, parsley, and garlic; stir in just enough oil to hold mixture together. Sprinkle each fillet with 1/6 of the crumb mixture and press lightly into the salmon. Place salmon in an oven-safe pan. Pour wine into the bottom of pan to keep salmon moist while it roasts. Roast 9-11 minutes or until the topping is golden, and salmon is just cooked through. Transfer to a plate; serve with Green Goddess dressing if desired.
