Creamy Carrot Gingered Soup

Ingredients


2 Tbs. butter


1/2 c. water


2 c. carrots, thinly sliced


1/2 c. sweet onion, coarsely chopped


2 c. skim milk


2 Tbs. gluten free, all-purpose flour


2 Tbs. sugar


3 cubes chicken bouillon


3 Tbs. fresh ginger root, minced


Coarse salt & fresh ground pepper, to taste


1 Tbs. fresh parsley, chopped

Directions


Heat the butter in a saucepan over medium-high heat. Add the carrots, onion, water and chicken bouillon cubes and simmer until carrots are tender. Cool slightly. Puree carrot mixture in a blender or food processor. Add milk, flour, sugar, and ginger. Mix to combine. Return carrot puree to pot. Simmer until thickened and warmed through, stirring occasionally. Add additional milk for desired consistency. Season with salt and pepper to taste. Serve in warmed soup bowls, and garnish with fresh chopped parsley.
