Ingredients
3 Tbs. lemon juice
2 Tbs. extra-virgin olive oil
1 tsp. Italian seasoning
1 can (15 ounces) mixed bean salad
2 cans (6 ounces each) light tuna packed in water, drained
5 cherry tomatoes, quartered
3 scallions, sliced
2 hard-cooked eggs, chopped
Fresh ground black pepper
Directions Whisk together the lemon juice, oil, and Italian seasoning in a medium bowl. Add the mixed bean salad, tuna, tomatoes, and scallions, tossing to coat. Gently stir in the eggs. Season with pepper to taste. Serve with your favorite gluten free crackers or rolls or with lettuce as a wrap.
