Southwestern Bake

1 lb. lean ground beef or turkey

2 cloves garlic, minced

1 onion, chopped

2 tsp. chili powder

1 (15 oz.) can black beans, rinsed and drained

1 (16 oz.) bag Birds Eye® C&W® Petite Sweet frozen Corn, thawed

1 (16 oz.) container reduce fat sour cream

2 c. Spike's Santa Fe Packing Company Salsa-Chunky Chunky Salsa-Mild

4 c. gluten free tortilla chips, crushed

1 1/2 c. shredded Cheddar cheese

1 large fresh tomato, finely chopped (optional)

3 green onions, chopped (optional)


Preheat oven to 375°F. Place ground beef /turkey, garlic and onion in a large skillet over medium heat to brown; drain. In a large mixing bowl, combine the meat, chili powder, black beans, corn, sour cream and salsa. Stir until well combined. Into a 9x13 inch baking dish, spoon half of the beef mixture to cover the bottom. Arrange the crushed tortilla chips on top of the meat mixture and layer with half of the Cheddar cheese. Spoon the other half of the meat mixture on top of the cheese layer, cover with remaining cheese. Top with diced tomato and green onions. Bake in the preheated oven for 40 minutes. Let stand 10 minutes before serving.
