Crunchy Chip-Chicken on a Stick

4 skinless, boneless chicken breast halves - cut into 1/2 inch cubes

1 egg

2 Tbs. milk (or substitute)

2 c. gluten free potato chips (Kettle chips, sour cream & cheddar, ranch Doritos), crushed

Wooden sticks from a craft or party store

1/4 tsp. salt & pepper

Preheat oven to 350°F. Spray baking sheet with non-stick cooking spray. Crush chips and place in a shallow bowl and toss with ¼ tsp. each of salt & pepper. Whisk together egg and milk in a shallow bowl. Dip the chicken cubes into the egg mixture, then coat well with potato chips. Spread the nuggets onto the baking sheet. Bake for 10 minutes in a preheated oven. Turn nuggets over, and bake for 10 minutes more, until golden brown. Remove baking sheet from oven, and insert a lollipop stick into each nugget and serve with rice cooked according to package directions. (Serves: 6)
