Fish Filets

3/4 lb. white fish (such as grouper or cod)

3/4 c. gluten free all-purpose flour

1/2 c. low-fat buttermilk

3/4 c. gluten free crackers, crushed

Coarse salt & fresh ground pepper, to taste

1/4 tsp. garlic powder

1 Tbs. fresh parsley, finely chopped

1 1/2 Tbs. canola oil


Cut the filets into 4 squares, each about 3 1/2 by 3 1/2 inches; rinse and dry well. Place the gluten free flour in a small bowl. Pour the buttermilk into another small bowl. Place crackers in a food processor or crush with a rolling pin. Combine the cracker crumbs with salt, pepper, garlic powder, and fresh parsley in a medium, shallow bowl; mix to combine. Dip each fish square into the flour, then the buttermilk, then the cracker crumb mixture. Heat a nonstick frying pan over medium-high heat and add the oil. Place all 4 fish squares into the frying pan. Fry the fish until the bottoms are golden brown; about 4 minutes per side. Serve on your favorite gluten free bun or dipped in tartar sauce.
