Tuna Patty Sandwich

Ingredients


1 egg


1/4 onion, chopped


1/2 tsp. prepared mustard


1/2 tsp. celery seed


1/4 c. gluten free, dry bread crumbs


1 (6 oz) can light tuna in spring water, drained and flaked


1 Tbs. lemon juice


Fresh ground black pepper, to taste


2 gluten free sandwich rolls, split



Directions


In a bowl, combine the egg, mustard, onion, celery seed, lemon juice, pepper, crumbs and tuna; mix well. Shape into four patties (mixture will be soft). Generously spray a skillet with cooking spray and place over medium heat. Fry the patties on both sides until lightly browned. Place two patties on each roll and serve. (Serves: 2)
