Quick-and-Easy Mexican Pasta

Ingredients


1 lb. DeBolesĀ® Pasta-Rice Spirals


1 can (15 oz.) black beans, rinsed and drained


1 onion, chopped


1 green bell pepper, chopped


1/2 c. sweet corn kernels


1 can (3.25 oz.) pitted black olives, drained


1 jar Spike's Santa Fe Packing Company Salsa-Chunky Chunky Salsa-Mild


2 Tbs. olive oil


1 c. reduced-fat sour cream, optional


1 c. shredded Cheddar cheese


Directions


Cook pasta according to package directions. Meanwhile rinse and drain beans and slice olives. While pasta is cooking, heat olive oil over medium heat in a large skillet. Cook onions and pepper in oil until lightly browned, 10 minutes. Stir in corn and heat through. Stir in black beans, tomatoes, salsa, olives and cook until thoroughly heated, 5 minutes. Drain pasta and transfer to a large serving bowl. Immediately stir in salsa mixture. Top each serving with sour cream and cheese if desired. (Serves: 4-6)
