Saucy, Gluten Free Meatballs

2 c. EREWHON® - Organic Corn Flakes Cereal

1/2 c. plus 2 Tbs. Simply Heinz® Ketchup

1 egg, slightly beaten

1/4 c. green bell pepper, chopped

1 lb. lean ground beef or turkey

1 (15 oz.) can tomato sauce

1/4 c. firmly packed brown sugar

1/4 c onion, finely chopped

1 Tbs. The Wizard’s-Organic GF/CF Vegan Worcestershire sauce

2 tsp. apple cider vinegar

1/4 tsp. fresh ground black pepper

Preheat oven to 400°. In large mixing bowl, combine cereal, 2 Tbs. ketchup, chopped bell pepper and the egg. Stir into ground beef. Shape into 1 1/4-inch meatballs. Place in single layer, in shallow baking pan, coated with cooking spray. Bake at 400° F for 12 minutes or until browned. For sauce, combine remaining ingredients except rice in a 4 qt. saucepan. Simmer over low heat for 15 minutes, stirring frequently. Add meatballs. Cook an additional 15 minutes. Cook rice according to package directions and serve topped with meatballs. (Serves: 6)
