Grilled Swordfish Steaks with Lemon-Parsley Sauce

3/4 c. fresh Italian parsley, minced

1 Tbs. grated lemon

1 1/2 tsp. garlic, minced

1/2 c. olive oil

1/4 c. fresh lemon juice

4 (8 oz.) swordfish steaks (3/4 inch thick)

Coarse salt & freshly ground black pepper

Lemon wedges, for garnish

1/4 tsp. crushed red pepper flakes


Combine parsley, lemon peel, red pepper flakes and garlic in small bowl. Mix in oil, lemon juice and salt & pepper.
Place fish in single layer in a shallow dish. Spoon half of parsley sauce over fish. Turn fish over to coat with sauce. Cover and chill 1 - 3 hours, turning occasionally. Preheat the grill and brush oil on the grill to minimize sticking. Grill the swordfish over medium-high heat, for 4-5 minutes per side or until fish flakes easily with a fork, turning only once. Remove from grill. Spoon remaining parsley sauce over fish, garnish with lemon wedges and serve. (Serves: 4)
